Converting tapas and traditional cuisine into a tourist attraction, the bet with which Dénia concludes its participation in Madrid Fusión

To start the morning, there will be a debate table with the theme "gastronomic experiences as their own identity". In this, the gastronomic projects developed to the different destinations will be discussed as an interesting incentive for tourism. The cook and president of Saborea España, Susi Díaz; the Canarian producer Toño Cilantro; the chef of the Denier Peix i Bases restaurant with a Michelin star and 2 Repsol suns, José Manuel López; the Canarian chef David Pérez; and the cook of the Leonese restaurant La Somoza, María José Bayón.

On the other hand, also in the morning, there will be an experiential workshop with the media and travel agencies entitled 'Marine treasures from the Atlantic to the Mediterranean'. In this space, the chef José Manuel López will work with an emblematic product of Deniera gastronomy: the red shrimp from Dénia. Before López's intervention, a representative from A Coruña, another destination attached to the Saborea España project, will cook with traditional Galician products. The objective is to observe the differences and similarities between both cuisines.

In the afternoon, the cook of the Xerna de Mar, Belén Escrivà, and her assistant, Alfons Cabrera, prepare the Dénia red shrimp donut with which they won first prize in the tapas contest in the tapas classroom Tapas from here of the Valencian Community. This will be the cover that will be offered to institutional visits today. Later, the chef José Manuel López will offer a showcooking for the public with the title 'Dénia, sea and orchard'.

At the same time, as part of the promotion of the Viu la posidònia project, a joint meeting is scheduled with the town councils of Cambrils and Eivissa and representation from Experiencias Turismo España, an initiative of the Ministry of Tourism. The mayors will present the project and the actions to representatives of the Secretary of State for Tourism. Both initiatives are financed by European Next Generation funds.

To end this edition of Madrid Fusión, the representatives of each participating municipality will take stock of the event that can be followed by the public.
