Rubén Cabrera of Rte. Gastronomic Dome IV contest winner Gamba Roja

The tinerfeño Rubén Cabrera won the first prize at the IV International Competition of Creative Cuisine Red Gamba de Dénia held at the Mercat Municipal.

His plate, 'Gamba Roja de Dénia: Tierra de Mar'It was the highest rated by a demanding jury awarded second prize to the recipe 'Gamba Dénia textures: acevichado cannelloni, crispy and sparkling mijas gazpachuelo' prepared by Daniel García Peinado, executive chef of Restaurant Alamar Vincci Selección Aleysa in Benalmádena (Málaga), and the third Germán Espinosa, executive chef of Restaurant Vermell Sant Cugat del Vallés (Barcelona) for your recipe ‘Gamba de Dénia inyectada, sobao de aceite de oliva y tomate’.

From early morning the Municipal Mercat was a hotbed of comings and goings, cooks, assistants and many onlookers who wanted to experience firsthand this important gastronomic event.
After receiving each a number of participation, cooks had two hours to prepare meals, which were presented to the jury 10 minutes intervals for tasting.

The jury was chaired by chef Quique Dacosta and completed by José Carlos Capel, food critic for the newspaper El País and president of Madrid Fusión; Jesús Trelis, gastronomic journalist from Las Provincias and author of the blog Historias con apron; the chef Ricard Camarena, Michelin star; Pedro Morán, chef and manager of Casa Gerardo in Prendes (Asturias), also a Michelin star; Sergio Adelantado, vice president of the Valencian Academy of Gastronomy and Julia Pérez Lozano, gastronomic critic, author of the Gastroactitud blog.

After 13 pm the verdict was announced, awarding the winner of the first prize 2.500 euros and a check for 600 euros in hospitality equipment; 1.500 euros for the winner of the second prize and 1.000 euros for the third place, in addition to a sculpture made by the artist from Jávea Toni Marí for the three finalists.

According to the winner, Rubén Cabrera, the secret of his course was that all parties had shrimp recipe and carefully decorated. For the winner was his first culinary award from the four that have already been submitted, valuing positively the experience in Dénia.

Rubén Cabrera was accompanied by her sister, who has become the first woman to participate in the contest. Until this issue had not participated any woman, not as a chef and as an assistant.

Quique Dacosta, meanwhile, praised the technical complexity of all the dishes this year, which has dominated the evolution of technology. According to the chef, the jury intended to send a message to create competition trend around the red shrimp.

Antes de la entrega de premios, la alcaldesa de Dénia, Ana Kringe, realizó un reconocimiento especial para la Cofradía de Pescadores «por su labor cotidiana, por ser un elemento clave y constante en la dinamización de la economía local, por mantener viva nuestra identidad como pueblo marinero y por el gran peso que ha tenido en el desarrollo y afianzamiento de nuestro municipio como destino turístico».
