The gonads of this cephalopod, so precious in the Mediterranean, can be cooked in many ways (in tomato sauce, cooked and cold, rebozadas ...). Most often serve them in our house is grilled and seasoned with parsley sauce, oil and garlic.

It is a delicate dish. When they are very tender and past little about the fire are a delight, although there are people who prefer well done. Do not hesitate to ask them if you come to El Marino.
