Quique Dacosta next target: Update the Mediterranean diet

In its eagerness to delve into the ins and outs of the Mediterranean diet and offer, starting from it, a cutting-edge cuisine, the cook Quique Dacosta It has embarked on a new research project by the Polytechnic University of Valencia and Valencian Institute of Tourism Technologies (Invat.tur).

The objective is to adapt the Mediterranean diet to new ways of life, as well as to the new uses that are made of food.

The first step will be done in the kitchen of Quique Dacosta Restaurant, where they will spend the products and methods to analyze, and then go to Ivant.tur, will bring the element of innovation making viable the progress made in the kitchen, and finally arrive college, where they will analyze nutritional and sensory what has been generated.

Starting in November, closing the season at Quique Dacosta Restaurant, will work together. It is anticipated that the results of the research will be ready in early 2012, some results presented in congresses gastronomic and culinary events around the world.

The intention is that this work will influence all audiences, and the movement has significance beyond the kitchen.
